So I made some italian chicken with veggies tonight

And it turned out ok. I think I would have marinated the chicken first and grilled it though, my piece was rather dry. But the veggies tasted really good. Even lil man ate it! Which is a hard thing to get him to do. So it's a recipe I'll have to tweak with.

Get several pieces of chicken put in the bottom of a dish add a sliced onion, sliced carrots and sliced potatoes. Pour a bottle (I got a medium bottle) of italian dressing over it. Cover with foil and cook at 350 for about 2 hours. (this is the recipe as it's given to me!)I'd probably shorten the cook time and possible do it another way. Definitely something to toy with.

It was dry because 2 hours is too long. I make a Moroccan dish that is similar and 1:15 works for me at 350.

That's what I was thinking. 2 hours is a LONG time to cook, I thought at first I was making italian jerky. Yeah, next time I'll probably cook it for about 45 minutes with the foil on, and then about 20 or so at the end with it off, that way the stuff browns up a little.

that sounds interesting... that's a dish that you could probably turn into several other dishes too... versatile is where it's at.
