If COPS is any indication you're only chance of getting busted is if you're picking up streetwalkers. The only busts I've ever seen on there involving escorts were stings targeting the escorts, not customers.

Cops pretending to be escorts (in order to bust potential customers) need to spend some money to place fake advertisements, get a new phone line, take a call, drive the pretend hooker and the arresting backup to the hotel room, make the arrest, transport the arrested back to the jail, then do the same thing all over again for the next arrest. Why would you do all that work when all you need to do is rent a couple of adjoining hotel rooms (one for arresting officers and detainees, and one for solicitation) and simply go through the phone book? It's a hell of a lot easier to arrest the escorts than the johns. God help you though if you're a politician, or a preacher and they get a hold of your favorite hooker's little black book. Then you're fucked but still unlikely to get charged with any crime. As far as the Elliot Spitzer scandal goes, do you really think it was an accident that the escort service used by the guy pissing off wall street just happened to come under investigation?
I don't think law enforcement is all that concerned with escorts anyway. When it comes to streetwalkers they crack down on it because neighborhoods get tired of skanks giving slob jobs in cars parked in front of their houses.
I'm not saying that it would be impossible to get busted for banging an escort, just extremely unlikely.
